We're excited to announce our next single barrel selection coming from the Sazerac Distillery. Buffalo Trace Barrel #16-A-08-U-4-65-278 was filled in January of 2016 and comes to us from the 4th floor of Warehouse U, out of the exceptional rick #65.
Buffalo Trace's exact mashbill is a generations old, heavily guarded secret, but from what we do know, the corn used in their recipe comes from local farms in Kentucky and Indiana, producing non-GMO corn to add to their "low rye" mashbill. The distillery also utilizes a proprietary yeast strain dating back to the 1930's, fermenting for three days before going through one more round of distillation. Once the juice is ready to head out of tanks, it goes into charred American white oak barrels with a stave seasoning period of six months, at a level 4 char.
On the nose, we found oranges spiced with allspice and light cinnamon alongside sweet cereal, like the classic vanilla-coated Frosted Flakes. The palate follows with hard caramel candies, roasted oranges, nutmeg and baked apples (fall in a glass, if you ask us) before finishing on a light herbal note. Add a drop of water for a nose of spiced apple cake with vanilla glaze and a caramel drizzle. With water, the palate opens up with a light, delicate texture expressing vanilla bean, white flowers and jasmine. A touch of mint comes through just before a finish brushed with salinity.
