Making ice wine is a fickle business. To do it well hinges on a combination of exceptional skill and expertise, very specific weather conditions, perfect timing and no small amount of luck. While the blending team at Barrell is not quite so beholden to chance and the changes of the seasons, it’s easy to see the similarities when it comes to meticulous crafting of delicious things to drink. The newest release from the Barrell Cask Finish Series starts with a blend of straight bourbons from Indiana, Kentucky, Tennessee and even one from Wyoming! The combination was dialed in specifically to harmonize with the intense fruit notes and rich texture of the ice wine. On the nose, expect fresh white flowers, melon and honey-roasted hazelnuts. On the palate, notes of golden raisins, apricot and coconut-flakes white chocolate macadamia cookies unfold into more savory notes of white pepper, beeswax and ginger on the finish.
