It’s always a pleasure collaborating with our pals at Cathead Distillery in Mississippi, and working together for our third Single Barrel selection was no exception. Our barrel, #17K29-25, was crafted at Speyside Cooperage and had a level 4 char; our whiskey went into the barrel on November 29, 2017 and was housed in Warehouse #1. Barrels are lovingly stored in this brick warehouse on a single level, where they are at the mercy of the Mississippi elements—there is no climate or temperature control here, so those long, hot summers in Jackson work to concentrate the flavors year after year. The barrel number signifies how far our barrel rested from the single warehouse door.
On the nose, we were met with aromas of peach cobbler with vanilla whipped cream and a dusting of bee pollen. The palate, on the other hand, presents savory bay leaf and mossy, sweet earth with a slightly nutty, oily finish. Add a few drops of water to open up those savory tones of mesquite tips, green thyme and laurel leaves, with vanilla toffee on the finish.
