Amaro lovers, rejoice! We have found you a new digestif. Aromatique is a style of liqueur that originated in Germany in 1828 as medicine used by many during an epidemic. Today, Th.Kramers Aromatique is the only surviving brand. While the recipe is closely guarded, one can still pick out dry baking spice, mint, saffron, and eucalyptus. Just a touch of sugar is added for balance, but bitter bark sings and dries the finish. Serve Aromatique slightly chilled or at room temperature as an after dinner nip, or  swap it for your favorite dry amaro in a cocktail.

Barrel aging gin has become a new frontier of discovery recently, with producers popping up and trying their hand at creating something unique. St George Distillery out of Alameda, California has been doing a small batch, annual release for the past few years that, in our opinion, is worthy of the anticipation. They start with their infamous Dry Rye gin, which is 100% rye mash, distilled with the classic gin botanicals: juniper, coriander, and caraway along with some grapefruit and lime peel. French and American casks lend it a merry, rosey hue unique even among aged gin. The result is incredibly complex, but perfectly balanced, with notes of peppercorns, candies, saffron, and plenty of citrus. We would suggest a cocktail, but think this limited release will surprise you with just a little water added.

It has returned! Cocktail historian David Wondrich inspired, pineapple-infused rum! Plantation Rum founder Alexandre Gabriel working in cahoots with Mr. Wondrich dreamed up the project as a hospitality gesture for the service industry. Needless to say, it was so delicious it took off and became highly coveted. Plantation Original Dark Rum has been left to macerate with Queen Victoria pineapples for three months. While the dark rum sits soaking up all that pineapple-y goodness, another fresh distillate is macerated with the bare rinds for a shorter amount of time before the two are blended. The history, the process, the goal, and the result all come together to make this rum one of the best infused spirits you will find on the market. Blues fans Austin Evans and Richard Patrick founded Cathead in 2010. The name was inspired by the generations-old tradition of musicians affectionately referring to one another as Cats, and as far as they know the term "Cathead" was coined by local clay artist and musician James "Son" Thomas. There is a close tie between the distillery and the blues community, "support live music" is printed on the label of each bottle and a portion of the profits are contributed to local heritage foundations. As for what's in the bottle, Distiller Philip Ladner uses a mash bill made up predominantly of corn and distills it six times for a crisp, clean vodka with a hint of sweetness on the end of the palate.

The first incarnation of Nelson's Green Briar Distillery was founded in the mid to late 1800s by Charles Nelson, when he realized that the whiskey he sold at his small grocery in Greenbriar, Tennessee far exceeded his supply. Over 100 years later, brothers Charlie and Andy Nelson resurrected the distillery founded by their great-great-great grandfather. Belle Meade Bourbon is lush, well-balanced and perfectly sippable. Made from a sour mash bill with nearly 30 percent rye, it features prominent notes of spice, balanced by the vanilla and caramel flavors imparted by aging in charred oak barrels. Hints of citrus and maple syrup on the nose draw you in and the long finish of cherry and cinnamon keep you coming back for more.

St. George Distillery's fruit brandies are nothing like you've ever tasted before. These delicious libations start as impeccably distilled brandies, to which more fruit is pressed for juice and added. Each 200 mL bottle contains juice from 15 pounds of Bartlett pears or 20 pounds of raspberry. Master distiller Lance Winters says their goal was to "take an olfactory snapshot to capture exactly what [the fruit] smells like at its peak of ripeness." They have certainly succeeded. Each bottle bears an incredibly complex and unmistakable aroma that will have your mouth watering.

Espolòn is made by master distiller Cirilo Oropeza in Los Altos (the highlands), Jalisco, Mexico. While he follows the tradition of using 100 percent blue agave, he does roast the piñas, the heart of the plant, for 18 to 20 hours, which is longer than many distillers. This process converts the starch in the plant to sugar, readying it for fermentation, and adds an abundance of flavor to the final spirit. Once distilled, the reposado is aged for six month in American white oak barrels. Espolòn is ideal for mixing with its bold flavors and full body. Notes of dried tropical fruit, vanilla and caramel temper the prominent spice of this tequila.

The Mitchell family has been in the merchant business since 1805, beginning as purveyors of wines, fortified wines and confections. Having a history in spirits spanning as far back as 1887, the Mitchell Family’s whiskey is one of the most sought after spirits in Great Britain.
 
As the luck of the Irish would have it, Green Spot is available state-side on a limited basis. While it does not carry an age statement, it is a blend of seven- to nine-year-old Pot Still Whiskey made from a mash of malted and unmalted barley that is triple distilled in traditional copper pot stills at Midleton Distillery.
