Founded in 2007 in Park City, Utah by Atlanta native David Perkins, High West Distillery produces unique blends of whiskey. Perkins makes your mouth water with the Double Rye by blending two different rye whiskies with very different grain builds to create a spectacular bottle. The first rye whiskey is 2 years old, with a blend of 95 percent rye and 5 percent malted barley that lends delicious pine, juniper, and mint to the whiskey. Then Perkins blends in a low rye content whiskey that just barley meets the requirements to be considered a rye whiskey. The grain build for this second rye whiskey is 53 percent rye and 37 percent corn, which is aged for 16 years, adding rich notes of vanilla and toffee.
